Chicken Skewers

There are but a few things my whole family can agree on when it comes to savoury, nutritious meals and Greek Chicken on skewers is one of those things. It makes my life so simple when 6 people can come together and all eat the same meal!
My Greek Chicken Skewers are simple and delicious – the best part (aside from the fact that they are super easy to make) is that the recipe is made up of ingredients I typically have on hand in my kitchen – so this is a perfect last-minute meal. It serves 6 to 8 people and although I usually aim for leftovers, in my home, this meal tends to leave me with empty dishes!
Greek Chicken Skewers
INGREDIENTS
MARINADE:
1/2 cup olive oil
1 1/2 tbsp. lemon juice
1/2 minced onion
1 tsp. hot mustard
1/4 tsp. steak spices
2 bay leaves
2 garlic minced
1 tbsp. Bragg soy sauce
1 tbsp. white vinegar
1/4 tsp. oregano
SKEWERS:
2 pounds boneless chicken thigh meat, cut into 2 inch pieces
1 bag frozen artichoke bottoms (375 grams)
1 bundle of asparagus
Extra virgin olive oil, for drizzling
Freshly cracked pepper
INSTRUCTIONS
MAKE THE MARINADE
Mix all the ingredients in a bowl & marinate the chicken at least 2 hours or overnight
COMBINE
Preheat the grill over medium-high heat to about 400F
Defrost the artichokes by soaking in lemon juice & cutting each bottom in half
Drizzle the vegetables with oil and season with salt and pepper
Skewer the chicken, alternating each piece with vegetables
Grill the skewers until lightly charred and cooked through, about 6 minutes per side
Before serving, cut a lemon in half, grill and squeeze onto your chicken skewers for an extra element of yum!
